Chocolate + Coffee Bark

….and sometimes all the time, this girl just craves chocolate (+ coffee)!!!

Not a reese’s cup or snickers bar – but some chocolate that would be my sweet tooth go-to without comprising my healthy lifestyle. Buying an organic, raw chocolate bar is pricey – more than Dave Ramsey and I feel comfortable with. So, I decided it was about time in my life that I  make my own chocolate treat and add a few of my favorite ingredients: more chocolate (of course), coffee (YES!), crushed pistachios (why not?), coconut oil (because I firmly believe coconut oil is a necessity), and other lovely eats.

Can I just say that chocolate + coffee is my love language.

This paleo chocolate + coffee bark is nutty, sweet, hints of saltiness, with the perfect amount of bitterness from the grounded coffee. Easy to make, and healthy too. I would go as far as to say that it’s better than sliced avocados, if I do say so myself.

 Ingredients:

~ 2 cups of Enjoy Life’s mega chocolate chips

~ 2 tbsp each of crushed pistachios, almonds, and pecans

~ 1 tsp of grounded coffee

~ 1 tsp of raw cacao

~ 1 tsp of coconut oil

~ 1/8 tsp of sea salt

Recipe:

~ Melt the two cups of chocolate in a microwave safe bowl and heat up. Every 20 seconds, stir until melted. It will have a few chunks after 40-60 seconds. At that point, just stir until melted.

~ Spread the melted chocolate on a baking sheet lined with parchment paper. Smooth it out with a spoon or spatula. Top the beautifully melted chocolate with the nuts and sea salt. Place in fridge for 30 minutes.

~ Right before you take the chocolate out of the fridge, melt coconut oil and combine with cocao. Stir.

~ Drizzle the oil-and-cocao combo, and top it off with the ground coffee, and more sea salt if you’d like.

~ Place back in fridge for 1 hour. Yes, 1 hour. It will be worth it. *Promise*

~ After the hour is up, take it out and carefully break the bark in pieces. Taste and see how life is so much better with coffee + chocolate bark.

Extra notes:

~Keep it in fridge or freezer.

~ Save some for spouse.
