Paleo Chocolate Almond Butter Cups

This is a story of how a love for Reese’s cups developed into a betrayal all for the love of homemade Paleo Chocolate Almond Butter cups.


Once upon a time pre-paleo, I loved Reese’s cups. Chocolate and PB just go together like water and sand, but now that I’ve become Paleo and my taste buds have changed, I ventured into finding a treat similar to my Reese’s cups without the processed, artificial consumption.

…. it took a few tries but I nailed these almond butter cups, and they are divine!

Only three ingredients needed. Yes, Three. Easy-Peasy to make too.

These almond butter cups are made out of homemade almond butter which is incredibly easy to make, but you can always use store bought almond butter.


DSCN0255Serving: 6 cups, just double ingredients if you would like 12.

Ingredients for Paleo Almond Butter Cups:

~ 1 cup of almond butter

~ 1 tsp of sea salt

~ 1 bag of Enjoy Life’s Chocolate Chips



~ Freeze almond butter

~ Melt the full bag of chocolate chips either over the stove or in the microwave. Stir every couple of seconds so that all chocolate chips are melted and it’s smooth, dark and heavenly. Be careful not to burn.

~ Put cupcake liners in a cupcake tin, and spray with coconut oil.

~ Put a tbsp of melted chocolate chips in each cupcake tin.

~ Take almond butter out of freezer and roll a generous 1/2 tbsp in balls and put in the middle of each cupcake tin

~ Pour another tbsp of chocolate to cover almond butter.

~ Sprinkle a little sea salt over the top of each almond butter cup. (optional)

~ Freeze for 20 minutes

~ Eat up.

Side note:

~ Store almond butter cups in freezer.
